สวัสดีค่ะ

 

ที่โรงงานเพิ่งเสร็จการตรวจ มาตรฐาน Costco ไป และได้ CAR มาประมาณ 100++ ข้อ ตอนนี้ท้อแท้มากกับการแก้ CAR เพราะเป็นคนดูแลระบบคุณภาพอยู่คนเดียว และเพิ่งผ่านโปรมาไม่ถึง 1 อาทิตย์ (เพิ่งเข้ามาทำงาน)

 

เคว้งมากกกกกกกกกกกกก ไม่ทราบว่าเพื่อนๆ พี่ๆ น้องๆ คนไหนเคยตรวจมาตรฐานนี้ไหมคะ ที่เป็นของ Costco wholesale ที่ USA อ่ะค่ะ ขอความช่วยเหลือหน่อยค่ะ

แก้ตามประเด็น CAR ไปเลยสิครับ

อย่างไรแล้วก็ลองถามมาดูได้ครับ

CAR เรื่องที่ งงมาก ไปไม่เป็นเลยคือ QP Food Defense และ QP Food Security ที่ต้องจัดทำใหม่

QP เรื่อง Recall แต่ทาง บ.ไม่มี recall เพราะส่งออก 100% และส่งต่อให้ supermarket ถ้าพบปัญหา supermarket จะแจ้งแล้วมีการ confirm เพื่อทำลายทิ้งที่ประเทศปลายทางค่ะ

QP เรื่อง crisis management ทำเอางงเป็นไก่ตาแตกกกกกกกกกกกกกกกกกกกกกกก และต้องทำเพิ่ม

งง กับการตรวจ SO₂ จากวัตถุดิบทุก lot ที่รับเข้า แต่วัตถุดิบเราเป็น organics ไม่มีการเติมสารเคมีเลย แล้วจะตรวจเพื่อ? และถ้าต้องตรวจจริงมีวิธีไหนเหรอคะ ที่ตรวจได้รวดเร็วขนาดที่ว่ารอผลเพื่อ รับเข้า หรือ reject สินค้าได้อ่ะค่ะ

การ validate จุด CCP ที่เป็นจุด ปิดขวด และ ซีลถุงสุญญากาศ ที่ยังไม่มีการกำหนด CL ที่ชัดเจนและไม่มีการ validate

ไม่มีการป้องกันอันตรายทางกายภาพ เพราะที่โรงงานไม่มี metal detector หรือ x-ray ประเด็นนี้ทำงัยได้บ้างคะ

เพื่อนๆ พี่ๆ น้องๆ คนไหนช่วยทำให้กระจ่างในประเด็นไหนได้บ้าง รบกวนด้วยนะคะ

คือ คุณยังไม่มี Food Defense Procedure ครับ

คือคุณยังไม่มีหลักฐานแสดงให้เห็นว่า คุณได้มีการตรวจประวัติของพนักงานว่าอาจเป็นบุคคลไม่พึงประสงค์มาก่อนบ้างหรือไม่  อาจมาทำให้อาหารโรงงานคุณ

มีปัญหาอันเกี่ยวกับ การก่อการร้ายทางอาหารได้  จริงๆคือหนึ่งในระบบ Food defense ที่ีคุณต้องทำเพิ่ม

คุณยังไม่มีระบบการป้องกัน หรือระบบการเข้าถึงสิ่งที่จะทำให้เกิดการปนเปื้อนโดยตั้งใจ ได้ง่าย  ต้องแก้ด้วยการทำ Food Defense

คุณยังไม่มีการคัดกรอง คนขับรถขนส่งวัตถุดิบเข้ามาในโรงงานคุณ  เขากลัวว่าคนขับรถขนส่งวัตถุดิบ  อาจเข้ามาทำมิดีมิร้ายกับกระบวนการผลิตอาหารของโรงงานคุณ
